Method
- Heat the water. Bring it to just off a boil — around 90°C / 195°F. A rolling boil can make chamomile taste bitter.
- Add the flowers. Place the dried chamomile (or tea bags) in your mug and pour the hot water over.
- Cover and steep 5–10 minutes. Covering the mug traps the aromatic oils that carry chamomile's flavor and fragrance.
- Strain. Remove the tea bags or pour through a fine strainer for loose flowers.
- Finish and sip. Stir in honey once the tea is warm rather than scalding, then sip slowly.
