- 2-3 lbs beef marrow bones or chicken carcass (or a mix)
- 2 tbsp apple cider vinegar
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 1 onion, quartered
- 2 cloves garlic, smashed
- 2 bay leaves
- 1 tsp dried thyme
- Water (enough to cover bones, about 12-16 cups)
- Salt to taste (add after straining)
