How to Make the Sheet Pan Salmon & Asparagus Dinner

Ingredients
  

  • 2 wild-caught salmon fillets
  • 1 bunch fresh asparagus (woody ends trimmed)
  • 2 tbsp extra virgin olive oil
  • 1 lemon (sliced)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Sea salt and black pepper to taste

Method
 

  1. Prep the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
    Season the Veggies: Place the asparagus on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, salt, pepper, and garlic powder. Toss to coat evenly.
    Prepare the Salmon: Place the salmon fillets on the other side of the pan. Drizzle the remaining 1 tablespoon of olive oil over the salmon. Season with salt, pepper, and dried oregano. Top each fillet with 2-3 lemon slices.
    Bake: Place the sheet pan in the oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp.
    Serve: Squeeze the roasted lemon slices over the whole dish before serving for an extra burst of fresh, inflammatory-fighting flavor!
